Buttercream Icing





(Medium Consistency)


Ingredients:


1/2 cup solid vegetable shortening


1/2 cup butter or margarine, softened


1 teaspoon Clear Vanilla Extract


4 cups sifted confectioners' sugar (approx. 1 lb.)


2 tablespoons milk


In large bowl, cream shortening and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. My Recipe book says mix Icing Sugar with a little milk - but that's rubbish!!! - Give the butter cream mix a twist.





First sieve 6 oz of Icing sugar in a bowl. Add 2 oz margarine. (preferably 'Stork'). In a cup place a Tsp of instant coffee. Pour over just enough boiling water to cover bottom of cup. Stir thoroughly. Add to the bowl. Finally add 1 Tsp Rum (or Rum essence). Stir mixture until Butter cream icing will make 'peaks' when you lift fork out of mixture.
I MAKE MINE WITH 1/2 LB OF UNSALTED BUTTER TO 6-8 TABLESPOONSFUL OF ICING SUGAR THEN MIX INTO WELL

you can add flavourings too like strawberry or vanilla





but to make chocolate butter icing just add coco
Mix good quality butter and castor sugar together and then whip like mad.





You will then have butter cream.





Of course,you can add vanilla essence or some other flavouring when you are mixing the butter and sugar.





A little added whisky or brandy also make delicious butter cream.
2oz butter


4oz icing sugar





Cream the butter with the sugar until pale, smooth and creamy.





For flavourings add:





1.Vanilla : add a few drops of vanilla essence


2. Chocolate: add 1 level tbsp sifted cocoa to the icing sugar : .or melt 1 oz plain choc and add


3. Coffee : dissolve 2 level tsps instant coffee in 1 tsp water and add.


4.Orange: add the finely grated rind of an ornge, for lemon do the same.
