Garlic Cream





2 tbsp butter


1 tsp minced garlic


3 tbsp flour


1 (3 oz) pkg of cream cheese


1 can chicken broth


1/2 tsp pepper





In 2 quart saucepan, melt butter, add garlic. Cook for 1 minute, then add flour and cook until smooth and bubbly.


Add other ingredients, stirring occasionally, until sauce is smooth and thickened.How to make a garlic cream sauce?
Brown some gallic in butter or oil. Add Salt, add pepper, add 1 part cream and one part chicken stock.





Simmer until thick
Melt 2-3 T. of butter in a saucepan, saute 1 T. minced garlic (I prefer 4-5 cloves of freshly pressed garlic, but jarred minced garlic will do) until just slightly golden (not too dark!), add 2 1/2 c. heavy cream and heat until reduced (will be creamy, not milky). Add coarse pepper to taste, 1/4 c. powdered parmesan for garlic alfredo, or some sundried tomatoes for a different taste.

4 bulbs garlic


陆 Vidalia onion (or other sweet onion)


陆 C (approximately) white wine (or water or stock)


1 T Italian herbs


陆 t salt


戮 C heavy cream








Method:








Preheat oven to 325 F. Cut off the top 1/3 of each garlic bulb, exposing the moist insides. Discard tops or use for stock. Cut the onion in half. Place all cut side down in a small roasting pan or casserole dish. Fill dish about 陆'; deep with wine, and sprinkle in the seasonings. Cover pan with lid or foil. Bake in oven for at least an hour till all the veggies are very soft. Check the pan once or twice to make sure it doesn't dry out. If dry, add more liquid. Hopefully, your pan will become dry at the same time that the veggies are finished cooking. Remove from oven and allow to cool to handle.





Squeeze out the pulp from the garlic and onion into the jar of a blender. Add the cream. Blend till very smooth. Pour into saucepan to heat till just bubbly. Taste for seasoning.
