* Medium cream (25% fat)

Cream is the top of the butter fat in the milking process. it is floating on the top of the milk once it is extracted from the cow. (ever heard CREAM OF THE CROP? that is where it comes from ) it can be made into whipped cream and it is the same as whipping cream,

whipped cream is just that whipped( if you get it in a can they have added Co2 to make it whip when you shake it.

Contains 5% butter fat can be whipped it contains enough butter fat in its molecules to keep in whipped. but not forever it can go flat. then it must be shaken again or re whipped.

HOWEVER if you whip cream to long , you end up with butter the next stage of the cream process.

whipping cream is the same as whipped cream once it is whipped.
