How do I keep ice-cream sufficiently chilled for an outdoor sundae party?

i work for an ice cream store we pre-scoop the ice cream into cups and cover them and then keep it in a cooler with dry ice on top of the ice creams scoops. If you put the dry ice under the ice cream it functions more like a fridge than a freezer because cold travels down.How do I keep ice-cream sufficiently chilled for an outdoor sundae party?
I would reccomend turning your freezer to the coldest setting, them you could put the ice cream im an ice chest until ready for use. The ice cream will get rock hard and then soften just enough for serving, unless you pull it out too soon.
Get a bag of Ice and salt it that way it wont melt, and put it in your esky, along with the ice cream which should keep it sufficiently cold
In the freezer, until its time to serve.
