Would like to add ice cream to a buisness?

I have an existing well known chocolate/fudge shop and would like to add homemade style ice cream. Everyone in the area has soft serve or bought ice cream but no one has homemade style like ';the bent spoon'; style ice cream. Whats the best way to learn the ice cream process on a retail level.Would like to add ice cream to a buisness?
He wanted people who would work hard and were eager to learn about the retail ice cream business in order to make their individual rags to riches stories.
